I am very sad about the cookie situation. Which is, that I can’t have any, because I’m not supposed to be eating sugar. And it’s coming up on Christmas cookie season. AUGH! I organized the cookie exchange for the AIC again this year, but at the very last minute, right before I sent out the email telling everyone how many were participating and how many cookies to make, I took my name off the list.
There were 12 people participating, which was a nice number, and a lot of cookies, and I thought that if I had 66 cookies in the house, I would eat them all. Because I love cookies. And have no cookie control. Cookie self-control, I mean. Although as it turns out, at least 3 of the cookie batches were ones I don’t like so I could have given those to Anders, haha!
And I’ve been quietly crying to myself about not being able to bake Christmas cookies anymore, which is a highlight of my YEAR, and what even is the point of Christmas if I can’t make and eat Christmas cookies? No iced sugar cookies cut into the shapes of trees and stars and holly leaves, with redhot cinnamon candies on them? No rice krispie holly bars, dyed green (also with redhot cinnamon candies on them)? No gingersnaps? No creme-filled sandwich cookies? No Rudolf Noses? No almond-flavored jam thumbprints? No cranberry pistachio bark? No lacy crisps? NO REINDEER POOP? O THE HUMANITY.
Today, I was talking to my manager about all the things that are stressing me out right now, one of them being the sugar issue, and she told me about this product: N!CK’S USE LIKE SUGAR. It uses a mix of sweeteners and can be used in baking and any other way you would use sugar (I don’t drink coffee or tea so don’t need it for those). I was going to the grocery store after work, so I added it to the list and bought a bag. I’ll make a batch of chocolate chip cookies this weekend and see how it works. If it tastes/works as advertised, then I’ll be able to make at least SOME Christmas cookies!
Christmas will be saved!
I’ve already made a to-do list for the holidays, that included Xmas decorations, Xmas cards, Xmas letter, Xmas presents, Xmas tree, Martin’s birthday. Now I can add Xmas cookies to it! YAY! I need to get started on the cards though, because apparently the deadline has already passed for Postnord’s economy mail for cards to arrive in time for Xmas outside of the EU. Suck. It’s November 26, Postnord, you jerks.
